Healthy Sweet Potato Pancakes
4 servings
5 minute prep; 25 minute cook
Ingredients required:
◾️ 16oz. sweet potatoes, peeled & cubed
◾️ 6 eggs
◾️ 1 tsp. ground cinnamon
◾️ 1 tbsp. coconut oil
◾️ 1/4 cup walnuts or pecans chopped
◾️ 2 tbsp. maple syrup
Instructions:
- Cook cubed sweet potatoes in boiling water for 15 minutes. Then drain & let cool.
- In a high bowl add cooled sweet potatoes, eggs, cinnamon, and purée till smooth with a hand mixer.
- Heat 1/4 tablespoon of the oil in a nonstick frying pan & add 3 portions of batter (around 2 tablespoons per pancake). Fry pancakes for approximately 3 minutes till brown. Flip halfway through & repeat with remaining batter.
- Divide pancakes onto plates (3 per serving), sprinkle with chopped nuts and drizzle with maple syrup.
Nutritional information: per serving - 268 calories, 14g fat, 30g carbohydrates, 12g protein
